Chicken and Cheese Breakfast Hash

Ingredients
- 200g chicken breast, diced
- 50g cheese, grated
- 1 medium onion, finely chopped
- 1 small tomato, diced
- 1 medium carrot, grated
- 1 medium potato, peeled and diced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tablespoon flour
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 tablespoon lemon juice
- 1 tablespoon honey
- Salt to taste
- Black pepper to taste
- Mixed herbs (like thyme, basil, oregano) to taste
- 2 tablespoons milk
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced onion and sauté until translucent.
- Add garlic and ginger, and cook for another minute until fragrant.
- Add the diced chicken, season with salt, black pepper, and mixed herbs, and cook until the chicken pieces are golden brown.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add butter and let it melt. Add the diced potatoes and grated carrot, cooking for about 5 minutes.
- Sprinkle flour over the vegetables and stir well.
- Return the chicken to the skillet, stir in the diced tomato, and add lemon juice and honey.
- Stir in the milk and grated cheese, mixing until the cheese is melted and all ingredients are well combined.
- Season to taste with additional salt and pepper if needed.
- Serve hot, garnished with a sprinkle of fresh herbs if desired.
