Ingredients
- 1 pound high-quality pasta (like fettuccine or linguine)
- 1 tablespoon extra-virgin olive oil
- 4 cloves garlic, minced
- 2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- Salt and freshly ground black pepper, to taste
- Chopped fresh parsley, for garnish
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain the pasta, reserving 1 cup of the pasta water.
- In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté until fragrant, about 1 minute.
- Lower the heat and slowly pour in the heavy cream, stirring constantly. Allow the mixture to simmer gently for about 2-3 minutes.
- Gradually whisk in the grated Parmesan cheese until the sauce is smooth and well combined.
- Add salt and freshly ground black pepper to taste.
- Toss the drained pasta into the skillet with the sauce. If the sauce is too thick, add a bit of reserved pasta water until the desired consistency is reached.
- Garnish with chopped fresh parsley before serving.
