Garlic Spiced Idli with Chutney Duo

Ingredients
- 2 cups Idli batter
- 4 cloves Garlic, finely chopped
- 1 tsp Mustard seeds
- 1 tsp Cumin seeds
- 1/2 tsp Red chili powder
- 1/4 tsp Turmeric powder
- 2 tbsp Oil
- Salt to taste
- 1/2 cup Coconut chutney
- 1/2 cup Tomato chutney
Instructions
- Heat 1 tablespoon of oil in a pan over medium heat.
- Add mustard seeds and cumin seeds; let them splutter.
- Add finely chopped garlic and sauté until golden brown.
- Add red chili powder, turmeric powder, and salt. Stir well.
- Pour this tempered garlic spice mix into the idli batter and mix thoroughly.
- Grease the idli molds lightly with oil.
- Pour the spiced idli batter into molds.
- Place the idli stand in a pressure cooker with 1-2 inches of water. Do not use the pressure regulator weight.
- Steam the idlis on medium heat for about 10-12 minutes until cooked.
- Carefully remove the idlis from the molds and serve hot with coconut and tomato chutneys.
