Ingredients
- 2 lbs fresh fettuccine pasta
- 1/2 cup truffle oil
- 2 cups mascarpone cheese
- 1 cup grated Parmesan cheese
- 1/2 cup finely chopped shallots
- 3 cloves garlic, minced
- 1/2 cup dry white wine
- 1/4 cup chopped fresh parsley
- 2 tablespoons unsalted butter
- Salt, to taste
- Freshly ground black pepper, to taste
- Truffle shavings, for garnish (optional)
Instructions
- Bring a large pot of salted water to a boil and cook the fresh fettuccine pasta for 2-3 minutes until al dente.
- Drain the pasta, reserving 1 cup of pasta water.
- In a large sauté pan over medium heat, melt the butter and add the shallots and garlic, cooking until soft and fragrant, about 3 minutes.
- Add the white wine and cook for another 2 minutes until slightly reduced.
- Lower the heat and stir in the mascarpone cheese until smooth and creamy.
- Mix in the truffle oil and half of the Parmesan cheese.
- Add the cooked pasta to the sauce, tossing to coat evenly. Use reserved pasta water as needed to reach desired consistency.
- Season with salt and pepper, then stir in the chopped parsley.
- Serve immediately, garnished with the remaining Parmesan cheese and optional truffle shavings.
