Ingredients
- 150g ground turkey
- 2 eggs
- 1/2 cup quinoa
- 1 small onion, finely chopped
- 1 cup spinach, roughly chopped
- 1/2 lemon, juiced
- 1/4 teaspoon salt
- 1 teaspoon mixed herbs
- 1 clove garlic, minced
- 1/2 jalapeño, sliced
- 1/2 tablespoon olive oil
Instructions
- Rinse the quinoa under cold water. Cook in a small pot with 1 cup of water and a pinch of salt. Bring to boil, reduce heat to low, cover, and simmer for 15-20 minutes or until water is absorbed.
- While quinoa is cooking, heat olive oil in a pan over medium heat. Add onion and garlic, sauté until translucent.
- Add ground turkey to the pan and cook for 5-7 minutes, breaking it into small pieces until browned and cooked through.
- Stir in the spinach, cooking until wilted, about 2 minutes.
- Incorporate the lemon juice, mixed herbs, and sliced jalapeño, stirring well.
- Move the turkey mixture to one side of the pan, crack the eggs on the other side, and scramble, cooking until just set.
- Combine the cooked quinoa with the turkey and vegetable mixture. Mix thoroughly and heat through.
- Adjust seasoning with salt according to taste before serving hot.
