Ingredients
- 2 large onions, thinly sliced
- 4 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- 1 tbsp mixed fresh herbs (such as thyme, rosemary, and parsley), finely chopped
- 1 medium lemon, juiced and zested
- 1/2 tsp sea salt
- Additional herbs for garnish (optional)
Instructions
- Heat the olive oil in a large, heavy-bottomed pan over medium heat on the stove top.
- Add the sliced onions and cook, stirring frequently, until they start to caramelize, about 20 minutes.
- Reduce the heat to low, add the minced garlic, and cook for another 5 minutes until fragrant, ensuring the garlic does not burn.
- Stir in the fresh herbs, lemon juice, and lemon zest, then season the mixture with sea salt.
- Cover the pan and allow the onions to braise in the lemon-herb mixture on low heat for 45 minutes to 1 hour, stirring occasionally.
- Taste and adjust seasoning if necessary. Continue to cook until the onions are tender and deeply flavorful.
- Serve warm, garnished with additional fresh herbs if desired.
