  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onion and cook, stirring occasionally, until caramelized, about 7-8 minutes. Remove from skillet and set aside.
  3. In the same skillet, add another tablespoon of butter and the sliced carrots. Drizzle honey over the carrots and sauté until tender and slightly caramelized, about 5 minutes. Remove and set aside.
  4. In a small saucepan, combine flour and milk to create a roux over medium heat. Stir constantly for about 2-3 minutes until thickened. Add lemon juice, salt, and pepper to taste.
  5. In a separate pan, add a small amount of butter and cook diced potatoes and tomatoes until potatoes are tender and tomatoes are soft, about 5 minutes. Season with salt and pepper.
  6. In a bowl, beat the eggs and add to the milk sauce, stirring quickly to incorporate until slightly thickened but not scrambled.
  7. Combine cooked pasta with the lemon butter sauce, adding caramelized onions, glazed carrots, and the potato-tomato mixture.
  8. Adjust seasoning with additional salt and pepper if needed. Serve immediately.
