  2. Place potatoes in a pressure cooker and cover with water. Cook under high pressure for 8 minutes and then perform a quick release.
  3. While potatoes are cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add sliced onions and sauté until golden brown, about 8-10 minutes. Set aside.
  4. In the same skillet, reduce heat to low and add remaining 1 tablespoon olive oil and minced garlic. Sauté for 1-2 minutes until fragrant. Remove from heat.
  5. Drain and transfer the cooked potatoes back into the pressure cooker pot or a large bowl. Add butter, milk, lemon juice, lemon zest, and garlic oil mix. Mash until smooth.
  6. Season the mashed potatoes with salt and pepper to taste.
