  2. Heat 1.5 tablespoons of olive oil in a large skillet over medium-high heat. When the oil is shimmering, carefully place the chicken breasts in the skillet, skin-side down.
  3. Sear the chicken for about 4-5 minutes on one side until golden brown, then flip and cook for an additional 4-5 minutes, or until the internal temperature reaches 165°F (74°C). Remove and let rest.
  4. While the chicken is resting, in the same skillet, add the remaining olive oil and reduce the heat to medium.
