Ingredients
- 4 large eggs
- 1/4 cup milk
- 1 tablespoon olive oil
- 1/2 cup fresh spinach, chopped
- 1/4 cup crumbled feta cheese
- 2 tablespoons sun-dried tomatoes, finely chopped
- 1 tablespoon butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a bowl, whisk together the eggs and milk until well combined. Season with a pinch of salt and pepper.
- Heat olive oil in a nonstick skillet over medium heat. Add chopped spinach and cook until wilted, about 2 minutes.
- Remove the spinach from the skillet and set aside.
- In the same skillet, melt the butter over medium-low heat. Pour in the egg mixture and cook until the edges start to set, about 2-3 minutes.
- Gently lift the edges of the omelette with a spatula, tilting the pan to let the uncooked eggs flow to the edges.
- Once the omelette is mostly set, but still slightly runny on top, sprinkle feta cheese, sun-dried tomatoes, and the cooked spinach over one half.
- Fold the omelette in half and cook for another 1-2 minutes, until the cheese is melted and the eggs are fully cooked.
- Slide the omelette onto a plate, garnish with fresh parsley, and serve immediately.
