Ingredients
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons cold butter
- 1/4 cup milk
- 1/2 cup shredded cheese
- 1 clove garlic, minced
- 1/2 small onion, finely chopped
- 1 tomato, finely diced
- 1/4 bell pepper, finely chopped
- 1 tablespoon olive oil
- 1 teaspoon mixed dried herbs
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a skillet, heat olive oil over medium heat. Add the minced garlic and finely chopped onion, sautéing until translucent.
- Add the diced tomato and bell pepper to the skillet, and cook for another 3-4 minutes until softened. Set aside to cool slightly.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- Cut the cold butter into the flour mixture until it resembles coarse crumbs.
- Stir in the shredded cheese and the cooked vegetable mixture, along with the mixed herbs and black pepper.
- Add the milk gradually, mixing until a soft dough forms.
- Turn the dough out onto a floured surface and gently knead a couple of times, then pat into a 1-inch thick round.
- Cut the dough into 4-6 scones using a sharp knife and place them onto the prepared baking sheet.
- Bake for 20-25 minutes or until the scones are golden brown and cooked through.
- Allow to cool slightly before serving.
