Ingredients
- 200g prawns, peeled and deveined
- 1 cup broccoli florets
- 1/2 cup sliced mushrooms
- 1 carrot, julienned
- 2 cloves garlic, minced
- 1 tablespoon ginger, finely chopped
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1/2 cup uncooked rice
- 2 large eggs
- 1/4 cup grated cheese (preferably Parmesan or any hard cheese)
- Salt to taste
- Black pepper to taste
Instructions
- Rinse and cook rice according to package instructions or until tender. Set aside.
- In a large pan, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat.
- Add the minced garlic and ginger, sauté until fragrant, about 1 minute.
- Add the prawns to the pan, season with salt and black pepper, and cook until they turn pink and are cooked through, about 3-4 minutes. Remove prawns from the pan and set aside.
- In the same pan, add the remaining olive oil and butter. Add the broccoli florets, sliced mushrooms, and julienned carrot. Stir-fry for about 5 minutes or until they are tender-crisp.
- In a small bowl, beat the eggs with a pinch of salt. Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Scramble until just set.
- Combine the cooked rice with the vegetables and eggs in the pan. Stir in the cooked prawns and mix well to incorporate all ingredients.
- Sprinkle the grated cheese over the top and let it melt slightly before removing the pan from heat.
- Serve hot, garnished with additional cheese if desired.
