Ingredients
- 2 large yellow potatoes, peeled and cubed
- 2 tablespoons olive oil, divided
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1/4 cup milk
- 1 tablespoon lemon juice
- Zest of 1 lemon
- Salt and pepper to taste
Instructions
- Preheat the stovetop over medium heat.
- Place potatoes in a pressure cooker and cover with water. Cook under high pressure for 8 minutes and then perform a quick release.
- While potatoes are cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add sliced onions and sauté until golden brown, about 8-10 minutes. Set aside.
- In the same skillet, reduce heat to low and add remaining 1 tablespoon olive oil and minced garlic. Sauté for 1-2 minutes until fragrant. Remove from heat.
- Drain and transfer the cooked potatoes back into the pressure cooker pot or a large bowl. Add butter, milk, lemon juice, lemon zest, and garlic oil mix. Mash until smooth.
- Season the mashed potatoes with salt and pepper to taste.
- Top the mashed potatoes with caramelized onions before serving.
