Ingredients
- 2 cups idli/dosa batter (fermented rice and urad dal batter)
- 1/2 cup finely chopped onions
- 1/4 cup finely chopped tomatoes
- 1/4 cup finely chopped bell peppers (capsicum)
- 1/4 cup grated carrots
- 2 green chilies, finely chopped
- 2 tablespoons chopped fresh cilantro
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- Salt to taste
- Black pepper to taste
- 2 tablespoons oil (for cooking)
- 1/2 teaspoon turmeric powder
Instructions
- In a mixing bowl, combine the chopped onions, tomatoes, bell peppers, grated carrots, green chilies, and cilantro. Add cumin seeds, mustard seeds, salt, black pepper, and turmeric powder. Mix well to prepare the vegetable topping.
- Heat a non-stick skillet or tawa over medium heat and drizzle a little oil.
- Pour a ladleful of batter onto the center of the skillet and gently spread it to form a thick pancake of about 6 to 8 inches in diameter.
- Immediately sprinkle a handful of the vegetable mixture over the batter, pressing lightly so the vegetables adhere to the surface.
- Drizzle a few drops of oil around the edges and on top of the uttapam.
- Cover and cook on medium heat until the bottom turns golden brown and the vegetables on top are slightly cooked, about 3 to 4 minutes.
- Flip the uttapam carefully and cook the other side for another 2 to 3 minutes until it is cooked through and golden.
- Remove from the skillet and repeat the process with the remaining batter and vegetable mixture.
- Serve hot with coconut chutney and sambar.
