Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 head of Boston or Bibb lettuce
- 1 ripe avocado
- 1/4 cup Greek yogurt
- Juice of 1 lime
- 2 tablespoons fresh cilantro, chopped
- 1 clove garlic, minced
- 1 tablespoon water
- 1/4 teaspoon cumin
- Salt to taste
Instructions
- Preheat your grill to medium-high heat.
- In a small bowl, mix olive oil, garlic powder, smoked paprika, salt, and pepper. Rub the mixture over the chicken breasts.
- Grill chicken for 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C). Let them rest for 5 minutes before slicing.
- While the chicken is grilling, prepare the avocado lime dressing. In a blender, combine avocado, Greek yogurt, lime juice, cilantro, minced garlic, water, cumin, and salt. Blend until smooth and creamy.
- Wash and separate lettuce leaves, making sure to keep them whole.
- Slice the grilled chicken into thin strips.
