Quick Carrot and Beef Pasta

Ingredients
- 200g pasta (preferably penne or fusilli)
- 200g ground beef
- 1 large carrot, grated
- 1 tablespoon olive oil
- 2 tablespoons tomato paste
- 1 teaspoon mixed dried herbs (such as oregano and basil)
- Salt and black pepper to taste
- Optional: Grated Parmesan cheese for serving
Instructions
- Boil pasta according to package instructions in salted water until al dente. Reserve some pasta water, then drain and set aside.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Add the grated carrot to the cooked beef and sauté for another 2-3 minutes until slightly softened.
- Stir in the tomato paste and mixed herbs, and cook for another minute.
- Season with salt and pepper to taste.
- Add the cooked pasta to the skillet, and toss to combine. If needed, add a splash of reserved pasta water to loosen the sauce.
- Serve hot, optionally sprinkled with grated Parmesan cheese.
