Ingredients
- 500g boneless, skinless chicken thighs, thinly sliced
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 3-4 Thai bird's eye chilies, finely chopped
- 1 medium onion, sliced
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 1 cup fresh Thai basil leaves
- 1 bell pepper, sliced
- Cooked jasmine rice, for serving
Instructions
- Heat the vegetable oil in a large pan over medium-high heat.
- Add the minced garlic and chopped chilies, stir-frying for 30 seconds until fragrant.
- Add the sliced chicken and onion to the pan, and cook for about 5-6 minutes until the chicken is cooked through and the onions are soft.
- Stir in the fish sauce, soy sauce, oyster sauce, and sugar until well combined.
- Add the bell pepper slices to the pan, cooking for another 2-3 minutes to allow them to soften.
- Remove the pan from the heat and stir in the Thai basil leaves, letting them wilt in the residual heat.
- Serve the spicy Thai basil chicken over steamed jasmine rice.
