  4. Add the sliced potatoes and grated carrot to the skillet, and cook for 5-7 minutes, stirring occasionally, until potatoes are slightly tender.
  5. Stir in the diced tomatoes and cook for another 2 minutes.
  6. In a bowl, whisk together the eggs, milk, and a pinch of salt until well combined.
  7. Pour the egg mixture over the cooked vegetables in the skillet. Sprinkle the grated cheese on top.
