Ingredients
- 150g white rice (uncooked)
- 200g chicken breast
- 1 medium onion
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
- 1 tablespoon unsalted butter
- 200ml chicken broth
- 1 teaspoon soy sauce
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- Fresh parsley for garnish
Instructions
- Rinse the white rice in cold water until the water runs clear.
- In a medium saucepan, bring the chicken broth to a boil. Add the rice, reduce the heat to low, cover, and simmer for about 15-18 minutes, or until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, slice the onion into thin rings.
- Heat olive oil in a large skillet over medium heat. Add the onions and sauté until they become golden and caramelized, about 10 minutes. Remove and set aside.
- In the same skillet, add the butter and garlic. Once the butter melts, add the chicken breast, seasoned with salt and pepper. Cook each side for about 5-7 minutes, or until fully cooked and golden brown.
- Once the chicken is cooked, add the soy sauce and fresh thyme. Sauté for another minute to combine the flavors.
- Slice the chicken breast into strips.
- To serve, place the cooked rice at the bottom of a bowl. Top with sliced chicken, caramelized onions, and garnish with fresh parsley.
