Ingredients
- 200g ground pork
- 200g ground beef
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 2 large tomatoes, diced
- 1 large carrot, finely grated
- 1 bell pepper, chopped
- 100g fresh spinach
- 200g fettuccine pasta
- Salt, to taste
- 1 tsp mixed Italian herbs (oregano, thyme, basil)
- 2 tbsp olive oil
- 50ml white wine (optional)
Instructions
- Heat olive oil in a large pan over medium heat.
- Add finely chopped onions and minced garlic, sauté until onions are translucent.
- Add ground pork and beef, cooking and breaking apart until browned.
- Stir in the grated carrot, chopped bell pepper, and diced tomatoes.
- Season with salt and Italian herbs. Add white wine, if using, and allow it to simmer until the liquid is reduced by half.
- In a separate pot, boil water with a pinch of salt for the pasta. Add the pasta and cook until al dente. Reserve 100ml of pasta water.
- Blend the fresh spinach with a little water to make a puree.
- Add the spinach puree to the sauce and mix well. Simmer for an additional 5 minutes.
- Add pasta water to the sauce if needed for desired consistency.
- Drain the pasta and mix with the sauce, ensuring it is well coated.
- Divide into two portions and garnish with freshly grated parmesan cheese and fresh basil leaves, if desired.
