Ingredients
- 4 large eggs
- 1 small onion, finely chopped
- 1/4 cup milk
- 1/2 cup shredded cheese (cheddar or your choice)
- 1 tablespoon butter
- 1 medium potato, peeled and thinly sliced
- 1 medium tomato, diced
- 2 slices of bread
- 2 tablespoons all-purpose flour
- Salt to taste
- 1 tablespoon olive oil
- 1 small carrot, grated
- 1 clove garlic, minced
Instructions
- Preheat the oven to 400°F (200°C).
- In a medium skillet over medium heat, melt the butter and olive oil.
- Sauté the onions and garlic until translucent, about 3 minutes.
- Add the sliced potatoes and cook until slightly golden, about 5 minutes.
- In a bowl, whisk together the eggs, milk, flour, and salt. Stir in the cheese, carrot, and tomato.
- Pour the egg mixture over the potatoes in the skillet. Cook for 2 minutes on the stove top until the edges start to set.
- Transfer the skillet to the preheated oven and bake for 10 minutes, or until the frittata is set and the top is golden.
- While the frittata is baking, lightly toast the bread slices in a toaster or on a pan.
- Remove the skillet from the oven, let it cool slightly, and then cut the frittata into wedges.
- Serve the frittata hot with toasted bread on the side.
