Ingredients
- 3 large eggs
- 100g cheddar cheese, grated
- 1 tablespoon butter
- 200g potato, diced
- 1 medium tomato, chopped
- 2 cloves garlic, minced
- 1 small onion, chopped
- 1 medium carrot, diced
- 1/2 bell pepper, sliced
- 100g white rice, cooked
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 slices whole grain bread
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon fresh ginger, minced
Instructions
- Cook the rice according to package instructions and set aside.
- In a large pan, heat the olive oil over medium heat. Add onion, garlic, and ginger, and sauté until fragrant.
- Add chopped carrots, bell pepper, and potato, and cook until the vegetables are tender.
- In a separate pan, melt butter over medium heat. Scramble the eggs until just cooked, then remove from heat.
- Mix the scrambled eggs into the vegetable mixture, along with the chopped tomato.
- Stir in the cooked rice, grated cheddar cheese, salt, pepper, and lemon juice until well combined and the cheese has melted.
- Toast the slices of whole grain bread.
- Serve the rice and vegetable mixture hot, alongside the toasted bread.
