Ingredients
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 medium potatoes, thinly sliced
- 1 carrot, grated
- 2 tomatoes, diced
- 4 eggs
- 1/4 cup milk
- 1/2 cup cheese, grated
- 1 tablespoon butter
- 2 slices bread, toasted
- Salt, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In an oven-safe skillet, heat olive oil over medium heat on the stove top.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the sliced potatoes and grated carrot to the skillet, and cook for 5-7 minutes, stirring occasionally, until potatoes are slightly tender.
- Stir in the diced tomatoes and cook for another 2 minutes.
- In a bowl, whisk together the eggs, milk, and a pinch of salt until well combined.
- Pour the egg mixture over the cooked vegetables in the skillet. Sprinkle the grated cheese on top.
- Move the skillet to the preheated oven and bake for 12-15 minutes, or until the egg is set and the cheese is golden.
- Toast the bread slices and spread with butter.
- Slice the frittata and serve alongside the buttered toast.
