  1. Bring a large pot of salted water to a boil and cook the fresh fettuccine pasta for 2-3 minutes until al dente.
  2. Drain the pasta, reserving 1 cup of pasta water.
  3. In a large sauté pan over medium heat, melt the butter and add the shallots and garlic, cooking until soft and fragrant, about 3 minutes.
  4. Add the white wine and cook for another 2 minutes until slightly reduced.
  5. Lower the heat and stir in the mascarpone cheese until smooth and creamy.
  6. Mix in the truffle oil and half of the Parmesan cheese.
  7. Add the cooked pasta to the sauce, tossing to coat evenly. Use reserved pasta water as needed to reach desired consistency.
  8. Season with salt and pepper, then stir in the chopped parsley.
  9. Serve immediately, garnished with the remaining Parmesan cheese and optional truffle shavings.
