Ingredients
- 1/2 medium cucumber, thinly sliced
- 1 small potato, peeled and diced
- 1 medium carrot, peeled and julienned
- 1/2 cup mixed seasonal vegetables (e.g., bell peppers, zucchini), chopped
- 2 strips of high-quality bacon, chopped
- 1 tablespoon olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
- 1/4 teaspoon smoked paprika
- Fresh dill and parsley for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped bacon and cook until crispy, about 5 minutes.
- Remove the bacon and set aside, leaving the rendered fat in the skillet.
- Add the diced potato to the skillet and sauté for 5 minutes until they start becoming golden.

- Stir in the cucumber slices, smoked paprika, salt, and pepper. Cook for an additional 2-3 minutes, ensuring all vegetables are tender but not overcooked.
- Return the bacon to the skillet, stirring everything together until well combined and heated through.
