Gourmet Beef and Mushroom Stir-fry

Ingredients
- 200g beef, thinly sliced
- 1/2 cup milk
- 2 eggs
- 3 cloves garlic, minced
- 1 onion, thinly sliced
- 200g mushrooms, sliced
- 1 cup cooked rice
- 1/2 cup chicken stock
- 1 tablespoon potato starch
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons olive oil
Instructions
- In a bowl, whisk together the eggs and milk. Season with a pinch of salt and set aside.
- In another bowl, mix the beef slices with potato starch, ensuring each piece is coated evenly.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the beef slices and stir-fry for 3-4 minutes until browned. Remove the beef from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil. Sauté the garlic and onions until the onions are translucent, about 2-3 minutes.
- Add the mushrooms and continue to sauté for another 2 minutes until they start to soften.
- Return the beef to the skillet and pour in the chicken stock. Stir to combine and allow it to simmer for 1-2 minutes.
- Add the egg and milk mixture, stirring constantly until it thickens slightly, about 1 minute. Season with salt and pepper to taste.
- Serve the beef and mushroom stir-fry over a bed of warm, cooked rice.
