  1. In a bowl, whisk together the eggs and milk until well combined. Season with a pinch of salt and pepper.
  2. Heat olive oil in a nonstick skillet over medium heat. Add chopped spinach and cook until wilted, about 2 minutes.
  3. Remove the spinach from the skillet and set aside.
  4. In the same skillet, melt the butter over medium-low heat. Pour in the egg mixture and cook until the edges start to set, about 2-3 minutes.
  5. Gently lift the edges of the omelette with a spatula, tilting the pan to let the uncooked eggs flow to the edges.
  6. Once the omelette is mostly set, but still slightly runny on top, sprinkle feta cheese, sun-dried tomatoes, and the cooked spinach over one half.
  7. Fold the omelette in half and cook for another 1-2 minutes, until the cheese is melted and the eggs are fully cooked.
  8. Slide the omelette onto a plate, garnish with fresh parsley, and serve immediately.
