Cheesy Corn Fritters

Ingredients
- 2 large eggs
- 1/4 cup milk
- 1/2 cup shredded cheese (preferably cheddar)
- 1/4 cup finely chopped onion
- 1 cup corn kernels (fresh, frozen, or canned)
- 1/2 cup all-purpose flour
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 tablespoon honey
- Salt to taste
Instructions
- In a bowl, whisk together the eggs and milk until well combined.
- Add the shredded cheese, chopped onion, corn kernels, flour, and a pinch of salt to the egg mixture. Stir until the ingredients are just combined.
- Heat the olive oil and 1 tablespoon of butter in a non-stick skillet over medium heat.
- Once the butter melts and starts to bubble, carefully spoon the batter into the pan, forming small fritters.
- Cook the fritters for about 3-4 minutes on each side, until they are golden brown and cooked through.
- Once cooked, remove the fritters from the pan and drain on paper towels.
- Melt the remaining tablespoon of butter in the microwave for about 20 seconds.
- Mix the melted butter with the honey and drizzle over the warm fritters before serving.
