  1. In a bowl, whisk together the eggs and milk until well combined.
  2. Add the shredded cheese, chopped onion, corn kernels, flour, and a pinch of salt to the egg mixture. Stir until the ingredients are just combined.
  3. Heat the olive oil and 1 tablespoon of butter in a non-stick skillet over medium heat.
  4. Once the butter melts and starts to bubble, carefully spoon the batter into the pan, forming small fritters.
  5. Cook the fritters for about 3-4 minutes on each side, until they are golden brown and cooked through.
  6. Once cooked, remove the fritters from the pan and drain on paper towels.
  7. Melt the remaining tablespoon of butter in the microwave for about 20 seconds.
  8. Mix the melted butter with the honey and drizzle over the warm fritters before serving.
