Gourmet Vegetable Stir-fry with Egg and Cheese

  1. Peel and grate the ginger, chop the garlic, onion, and carrot finely.
  2. Dice the potato into small cubes and slice the tomato.
  3. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the garlic, onion, and ginger and sauté until fragrant.
  4. Add the potato cubes and carrot to the pan and cook for 5 minutes, stirring occasionally.
  5. In another pan, heat 1 tablespoon of butter over medium heat. Scramble the eggs and season with salt and pepper. Set aside once cooked.
  6. Add the diced tomato to the vegetable mix and stir for 2 minutes.
  7. Mix in the cooked rice, scrambled eggs, and remaining olive oil into the vegetable pan. Stir well, allowing the flavors to combine. Season with additional salt and pepper to taste.
  8. Plate the mixture and grate the cheese on top while hot, to allow it to melt slightly.
  9. Serve with toasted bread slices on the side, drizzled with a little lemon juice.
