Gourmet Vegetable Stir-fry with Egg and Cheese

Ingredients
- 2 Eggs
- 50g Cheese (preferably cheddar or mozzarella)
- 1 tbsp Butter
- 1 Potato
- 1 Tomato
- 2 cloves Garlic
- 1 small Onion
- 1 small Carrot
- 1 cup Rice (cooked)
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 2 tbsp Olive Oil
- 1 Lemon
- 1-inch piece Ginger
- 2 slices Bread
Instructions
- Peel and grate the ginger, chop the garlic, onion, and carrot finely.
- Dice the potato into small cubes and slice the tomato.
- Heat 1 tablespoon of olive oil in a pan over medium heat. Add the garlic, onion, and ginger and sauté until fragrant.
- Add the potato cubes and carrot to the pan and cook for 5 minutes, stirring occasionally.
- In another pan, heat 1 tablespoon of butter over medium heat. Scramble the eggs and season with salt and pepper. Set aside once cooked.
- Add the diced tomato to the vegetable mix and stir for 2 minutes.
- Mix in the cooked rice, scrambled eggs, and remaining olive oil into the vegetable pan. Stir well, allowing the flavors to combine. Season with additional salt and pepper to taste.
- Plate the mixture and grate the cheese on top while hot, to allow it to melt slightly.
- Serve with toasted bread slices on the side, drizzled with a little lemon juice.
