Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a shallow dish, combine breadcrumbs, Parmesan cheese, parsley, thyme, rosemary, and lemon zest. Mix well.
  3. Season the chicken breasts with salt and pepper on both sides.
  4. Coat each chicken breast in flour, shaking off the excess. Dip in beaten eggs, then press into the herb mixture to coat fully.
  5. In an ovenproof skillet, heat olive oil over medium-high heat. Add chicken breasts and cook for about 3 minutes per side, until golden brown.
  6. Transfer the skillet to the oven and bake for 15-20 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
  7. While the chicken is baking, prepare the lemon garlic sauce. In a saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  8. Add lemon juice to the butter and garlic, and stir for 2-3 minutes until the sauce slightly thickens.
  9. Remove the chicken from the oven and let it rest for 5 minutes before serving.
  10. Drizzle the lemon garlic sauce over the chicken before serving.
