Ingredients
- 1 cup cooked Japanese short-grain rice
- 2 large eggs
- 5 spears of asparagus, trimmed and cut into 1-inch pieces
- 1/4 cup shredded Gruyère cheese
- 1 tablespoon soy sauce
- 1 tablespoon mirin
- 1 tablespoon vegetable oil
- Salt, to taste
- Freshly ground black pepper, to taste
- Chopped scallions for garnish
Instructions
- In a non-stick skillet, heat vegetable oil over medium-high heat.
- Add the asparagus pieces and sauté for 3-4 minutes until they are tender yet still vibrant green.
- Whisk the eggs in a bowl and season them with a pinch of salt and pepper. Pour the eggs into the skillet with the asparagus.
- Gently scramble the eggs until they are just set, then remove them from the pan and set aside.
- In the same skillet, add the cooked rice, soy sauce, and mirin. Stir-fry for 2-3 minutes until everything is well combined and the rice is heated through.
- Return the scrambled eggs and asparagus to the skillet and mix well.
- Turn off the heat and gently fold in the shredded Gruyère cheese, allowing it to melt slightly.
- Transfer to a serving plate and garnish with chopped scallions.
