Lemon Garlic Chicken with Herbed Rice and Crispy Broccoli

Ingredients
- 2 boneless skinless chicken breasts
- 2 cloves of garlic, minced
- 1 large potato, diced
- 1 small onion, finely chopped
- 1 cup jasmine rice
- 1 cup broccoli florets
- 1 lemon, juiced and zested
- 1 tablespoon olive oil
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- 1. Preheat the air fryer to 400°F (200°C).
- 2. In a bowl, mix 1/2 of the minced garlic, lemon juice, lemon zest, 1/2 tablespoon olive oil, and honey. Add salt and pepper to taste. Coat chicken breasts with the mixture.
- 3. Place the chicken in the air fryer and cook for 15 minutes, flipping halfway through.
- 4. Meanwhile, rinse the rice under cold water. In a pot on the stove top, bring 2 cups of water to boil, add a pinch of salt, 1/2 of the chopped onion, and the rice. Reduce heat to low and simmer covered for 12 minutes.
- 5. In a separate pan, heat the remaining olive oil over medium-high heat. Add the remaining garlic and onion, sauté until translucent. Add diced potato and sauté until lightly golden. Season with salt and pepper.
- 6. Transfer the potatoes to the air fryer, alongside the chicken, and cook for an additional 5 minutes.
- 7. Add broccoli florets to the air fryer in the last 5 minutes to cook until they are crispy.
- 8. Once the chicken is cooked through and golden, let it rest for a few minutes. Slice the chicken and serve atop the herbed rice with the crispy broccoli and potatoes.
- 9. Drizzle with remaining lemon sauce before serving.
