Ingredients
- 3 large eggs
- 200 ml liquid egg whites
- 150 g fresh spinach, chopped
- 300 g sweet potato, peeled and cubed
- 1 tbsp olive oil
- Salt to taste
- Black pepper to taste
- 1 tbsp chopped chives (optional for garnish)
Instructions
- Peel and cube the sweet potato. Heat a skillet over medium heat and add 1 tablespoon of olive oil.
- Add the sweet potato cubes to the skillet. Cover and sauté for about 10-15 minutes, stirring occasionally, until tender.
- In a large bowl, whisk together the whole eggs and egg whites. Season the mixture with salt and pepper.
- Once the sweet potatoes are cooked, add the chopped spinach to the skillet. Stir for 2-3 minutes until wilted.
- Pour the egg mixture into the skillet with the sweet potatoes and spinach. Reduce the heat to low and cook gently, stirring occasionally, until the eggs are scrambled to your liking.
- Serve the scramble hot, garnished with a sprinkle of chopped chives if desired.
