  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a saucepan, melt 2 tablespoons of butter over medium heat. Add the chopped onion and cook until translucent, about 5-7 minutes.
  3. Add the minced garlic and diced tomatoes, cooking for another 3 minutes until the tomatoes soften. Season with salt and pepper.
  4. In a bowl, beat the eggs lightly and mix in the milk. Gradually add flour, whisking continuously to avoid lumps. The batter should be smooth.
  5. In another bowl, mix together the crumbled feta cheese with the cooked onion, garlic, and tomato mixture. Set aside.
  6. Grease a 9x13 inch baking dish with the remaining butter. Pour a thin layer of the egg and milk batter to cover the bottom.
  7. Spread half of the cheese mixture over the batter and cover with another layer of batter. Repeat the process ending with a layer of batter on top.
  8. Bake for 25-30 minutes or until the top is golden brown and puffy.
  9. Allow to cool slightly on a rack before cutting into squares and serving warm.
