Ingredients
- 2 large eggs
- 1/2 cup whole milk
- 1 cup feta cheese, crumbled for authentic taste, or use Turkish beyaz peynir
- 4 tablespoons unsalted butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 medium tomatoes, finely diced
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a saucepan, melt 2 tablespoons of butter over medium heat. Add the chopped onion and cook until translucent, about 5-7 minutes.
- Add the minced garlic and diced tomatoes, cooking for another 3 minutes until the tomatoes soften. Season with salt and pepper.
- In a bowl, beat the eggs lightly and mix in the milk. Gradually add flour, whisking continuously to avoid lumps. The batter should be smooth.
- In another bowl, mix together the crumbled feta cheese with the cooked onion, garlic, and tomato mixture. Set aside.
- Grease a 9x13 inch baking dish with the remaining butter. Pour a thin layer of the egg and milk batter to cover the bottom.
- Spread half of the cheese mixture over the batter and cover with another layer of batter. Repeat the process ending with a layer of batter on top.
- Bake for 25-30 minutes or until the top is golden brown and puffy.
- Allow to cool slightly on a rack before cutting into squares and serving warm.
