Ingredients
- 400g high-quality durum wheat pasta
- 2 tablespoons unsalted European-style butter
- 4 large garlic cloves, minced
- 500g ripe San Marzano tomatoes, peeled and chopped
- 1/2 cup whole milk
- Salt to taste
- Freshly ground black pepper to taste
- Fresh basil leaves for garnish
Instructions
- Bring a large pot of salted water to a rolling boil. Add the pasta and cook until just al dente, according to package instructions. Reserve 1/2 cup of pasta water, then drain the pasta.
- In a large saucepan over medium heat, melt the butter until it begins to foam. Add the minced garlic and sauté until fragrant and lightly golden, about 1-2 minutes.
- Add the chopped tomatoes to the garlic butter and season with salt and pepper. Cook over medium heat, stirring frequently, until the tomatoes break down and form a sauce, about 10 minutes.
- Lower the heat and gently stir in the milk, allowing it to warm through and create a creamy consistency. Adjust seasoning to taste.
- Add the drained pasta to the sauce, tossing gently to coat. If needed, add reserved pasta water a tablespoon at a time to reach the desired sauce consistency.
- Serve immediately, garnished with freshly torn basil leaves and an extra grind of black pepper.
