  1. Heat 1 tablespoon of oil in a pan over medium heat.
  2. Add mustard seeds and cumin seeds; let them splutter.
  3. Add finely chopped garlic and sauté until golden brown.
  4. Add red chili powder, turmeric powder, and salt. Stir well.
  5. Pour this tempered garlic spice mix into the idli batter and mix thoroughly.
  6. Grease the idli molds lightly with oil.
  7. Pour the spiced idli batter into molds.
  8. Place the idli stand in a pressure cooker with 1-2 inches of water. Do not use the pressure regulator weight.
  9. Steam the idlis on medium heat for about 10-12 minutes until cooked.
  10. Carefully remove the idlis from the molds and serve hot with coconut and tomato chutneys.
