Ingredients
- 4 chapathis
- 1 cup soya beans
- 1 medium cucumber, thinly sliced
- 1 large carrot, grated
- 1 medium onion, thinly sliced
- 1 lemon, juiced
- Salt to taste
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- Fresh coriander leaves for garnish (optional)
Instructions
- Cook the soya beans: Bring a pot of water to a boil on the stove top, add soya beans and cook for 15-20 minutes until tender. Drain and season with salt and pepper.
- Prep the veggies: While the soya beans are cooking, prepare the vegetables. Thinly slice the cucumber and onion, and grate the carrot. Mix the cucumber, carrot, and onion in a bowl with lemon juice, olive oil, salt, and pepper.
- Warm the chapathis: Heat them individually on a stove top skillet for 1 minute on each side until warm and pliable.
- Assemble the rolls: Lay each chapathi flat, spread a portion of the cooked and seasoned soya beans along the center, top with the vegetable mixture, and sprinkle with fresh coriander if desired.
- Roll the chapathis tightly around the filling, slice each roll in half, and serve immediately.
