Ingredients
- 250g pasta
- 1 medium onion, thinly sliced
- 2 medium carrots, thinly sliced
- 2 tablespoons unsalted butter
- 2 tablespoons honey
- 1 tablespoon flour
- 1/2 cup milk
- 1 tablespoon lemon juice
- 1 potato, finely diced
- 1 tomato, diced
- 2 eggs
- Salt to taste
- Pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
- In a large skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onion and cook, stirring occasionally, until caramelized, about 7-8 minutes. Remove from skillet and set aside.
- In the same skillet, add another tablespoon of butter and the sliced carrots. Drizzle honey over the carrots and sauté until tender and slightly caramelized, about 5 minutes. Remove and set aside.
- In a small saucepan, combine flour and milk to create a roux over medium heat. Stir constantly for about 2-3 minutes until thickened. Add lemon juice, salt, and pepper to taste.
- In a separate pan, add a small amount of butter and cook diced potatoes and tomatoes until potatoes are tender and tomatoes are soft, about 5 minutes. Season with salt and pepper.
- In a bowl, beat the eggs and add to the milk sauce, stirring quickly to incorporate until slightly thickened but not scrambled.
- Combine cooked pasta with the lemon butter sauce, adding caramelized onions, glazed carrots, and the potato-tomato mixture.
- Adjust seasoning with additional salt and pepper if needed. Serve immediately.
